PEPPERMINT PINWHEEL COOKIES

2 c. flour
1/2 tsp. salt
3/4 c. sugar
1 egg yolk
1/2 tsp. baking powder
1 1/2 sticks butter
1 tsp. vanilla

Beat all together and divide dough in half. In one of the bowls, add 1/2 teaspoon mint extract and a few drops of red food coloring. Roll out each color (white and red) on separate sheets of wax paper. Lay one piece of dough on top of the other and roll together jelly roll style. Chill, cut into 1/8 to 1/4 inch slices and place on ungreased cookie sheet. Bake at 350 degrees for about 10 minutes.
